Just when I begin to think we’ve made it through the thick of winter… bam! More snow! Don’t get me wrong, I enjoy the snow (in moderation)… but what I don’t enjoy is Mother Nature teasing us with Spring-like weather in the middle of winter. One day it’s -18C with the windchill and I’m bundled up in 5 layers of clothing, and the next it’s +12C and I’m out in the sun for a 5KM run! But hey, I guess that’s Canada, right?
One thing’s for sure, when the temperature dips I crave soup. A big ol’ bowl of steamy, rich soup. It’s amazing how it can elevate your day in a warm embrace, making you forget what’s happening right outside your kitchen window. Even the biggest and nastiest snow squalls seemingly disappear when you indulge in a hot bowl of soup. But let’s be honest, plain soup day-in and day-out can get kind of… routine. Open a can, pour, heat, eat. Repeat. So when I was introduced to Campbell’s Everyday Gourmet soups I knew they would break my routine! These premium purees are more than just a can of soup – literally, since they come in a carton! With no artificial flavours/colours, and bold flavours like Thai Tomato Coconut and Sweet Potato Tomatillo, these soups are not only great on their own, they are excellent when enhanced with unique garnishes! Or as I like to call it… a little soup makeover! Take Campbell’s Everyday Gourmet Tomato Basil Bisque for example. Juicy tomatoes are combined with rich cream and basil… which is great on its own, but as soon as you add grilled cheese croutons and a few leaves of fresh basil… the dish is elevated to a whole new level! And then there’s Campbell’s Everyday Gourmet Thai Tomato Coconut Soup. The delicious taste of tomatoes join forces with creamy coconut milk, shallots and Asian/Thai inspired spices in this soup to create something that makes your tastebuds sing… but as soon as you add spicy grilled shrimp, fresh corn and a swirl of lime crema… the dish is elevated to a whole new level! Last but not least there’s Campbell’s Everyday Gourmet Golden Butternut Squash Soup. While I love all soups in the Winter, I think I especially love this one in the Fall. Vibrant butternut squash is combined with cream with the taste of fine herbs, definitely a treat on a cold day… but add slices of green apple, cubed brie and crunchy pumpkin seeds… the dish is elevated to a whole new level!
I don’t know a single person who could resist a hot bowl of soup on a cold winter day… especially with these gourmet garnishes!
