Over Night Oats Three Ways

And I mean loooooove my weekends. There’s nothing like doing absolutely nadda for two days after hustling like a mofo through five! Lounging around in my PJ’s all morning… maybe getting dressed by noon… drinking copious amounts of coffee… and binge-watching Grey’s Anatomy – definitely my kind of weekend!

Last weekend, however… not so much. If you follow me on Instagram you would have seen I spent all day Saturday at my rental property tearing up carpet, hardwood flooring and removing (what felt like) one million nails. Performing any type of manual labour on a weekend isn’t my ideal, but when the heck else am I going to do it!? By the time “J” and I got home we were sore, dirty, and quite frankly, cranky!

While it took everything in me to order a pizza for dinner, I reserved enough energy to whip together Sunday morning’s breakfast – overnight oats. If you’ve never heard of overnight oats… I’m not sure what to say to you. I will, however, admit they have quickly become my latest obsession.

How to Make Overnight Oats

When it comes to this easy and delicious breakfast the possibilities are endless! There are hundreds… maybe even thousands of flavour combinations, and I’ve tried them all. Ok, maybe not all, but I’ve had my fair share! Lucky for you, my experimentation helped me discover three tried & true flavour combos: one for the chocolate lover, one for the nut butter & banana lover, and one for the lemon meringue pie lover! So why not kick back and relax this weekend with a tasty Sunday morning breakfast!?

Almond Butter and Banana Overnight Oats

Almond Butter + Banana Overnight Oats

Ingredients
1/2 cup rolled oats
1/2 cup almond milk
1 tbsp chia seeds
1 tbsp brown sugar
3 tbsp coconut Greek yogurt
3 tbsp coconut almond butter
1 banana, sliced

Directions
1. Pour rolled oats, almond milk chia seeds, and brown sugar into a mason jar or bowl. Stir until all oats are submerged and brown sugar is dissolved. Cover and place oats in fridge overnight.
2. When ready to serve remove from fridge and top with yogurt, almond butter and banana.

Raspberry and Dark Chocolate Overnight Oats

Raspberry + Dark Chocolate Overnight Oats

Ingredients
1/2 cup rolled oats
1/2 cup almond milk
1 tbsp chia seeds
1 tbsp brown sugar
1 tbsp raspberry jelly
3 tbsp plain Greek yogurt
1/2 oz dark chocolate, chopped
6 fresh raspberries

Directions
1. Pour rolled oats, almond milk chia seeds, and brown sugar into a mason jar or bowl. Stir until all oats are submerged and brown sugar is dissolved. Cover and place oats in fridge overnight.
2. When ready to serve remove from fridge and top with raspberry jelly, yogurt, chocolate and fresh raspberries.

Lemon Meringue Pie Overnight Oats

Lemon Meringue Overnight Oats

Ingredients
1/2 cup rolled oats
1/2 cup almond milk
1 tbsp chia seeds
1 tbsp brown sugar
1 (100g) contain Oikos Lemon Meringue Greek Yogurt
2 tbsp fresh real whipped cream
1 tsp fresh lemon zest
Garnish: Lemon slice

Directions
1. Pour rolled oats, almond milk chia seeds, and brown sugar into a mason jar or bowl. Stir until all oats are submerged and brown sugar is dissolved. Cover and place oats in fridge overnight.
2. When ready to serve remove from fridge and top with Lemon Meringue Greek Yogurt, whipped cream, lemon zest and garnish with a lemon slice.
