Bacon, Blueberry and Basil Grilled Cheese

Here we are on the last day of April. Honestly, if there is one month I look forward to the most, it’s April.

Why you ask? Well, the first thing you need to know about me is my life revolves around two things: weather and food. If it’s snowing, I’m grouchy. If I’m hungry, I’m even grouchier.

So, what’s April have to do with that? Well, for starters, April showers melt all that awful white stuff we’ve been living with for the past 6 months making way for beautiful flowers, greenery, and sunshine… and of course, sunshine makes me happy! But what makes me even happier is April is Grilled Cheese Month, meaning I get to enjoy a grilled cheese every day for 30 days (pssst, I hear foods don’t have calories when consumed in a month that is dedicated to them… just sayin’).

Everyone knows it’s the cheese that can make or break a grilled cheese. From gruyère to brie, you must use a good melty cheese. You know it’s going to be good when the cheese slowly melts out from between the crisp edges of the bread and pools on your plate! Oh yeah, that’s the stuff!

To close out Grilled Cheese Month I wanted to prepare something craveable. Something sweet and savoury. Something that would have you saying, “get in my belly!” And well, this bacon, blueberry and basil grilled cheese does just that! The beautiful, melty Heidi cheese in this recipe was graciously provided by my good friends at the Dairy Farmers of Canada and Farm House Cheeses in British Columbia.

With deep rich flavours and slightly grassy notes, Heidi is made from the rich milk of cows that graze freely in the lush pastures of the Fraser Valley. Heidi is aged for a minimum of 8 months making it a fabulous melting cheese and is best served in a grilled cheese! Especially THIS grilled cheese!

Bacon, Blueberry and Basil Grilled Cheese

This grilled cheese is what dreams are made of! Thick-cut bread is topped with grated Heidi, crispy bacon, blueberry compote and chopped fresh basil. The outside is generously buttered with homemade cinnamon honey butter before it’s grilled to perfect!

Makes: 3 sandwiches

Ingredients
6 slices thick cut bread
6 oz grated Heidi cheese
3 slices maple bacon, cooked until crispy, cut in half
3 tbsp blueberry compote or jam
3-4 basil leaves, roughly chopped
6 tsp Cinnamon Honey Butter

Directions
1. Preheat a grill pan or non-stick frying pan over medium heat.
2. Top three slices of thick-cut bread with blueberry compote, chopped basil, 2 oz grated Heidi and bacon. Top with remaining slices of bread. Butter both sides of the sandwich with cinnamon honey butter.
3. Place sandwich in grill pan and cook for 3-4 minutes on each side, or until crispy and golden brown. Remove from heat and serve immediately!
