Pear Galette with Honey, Walnuts and Blue Cheese

Oh boy, I feel a confession coming on…. I’m not a baker. There. I said it!

Don’t get me wrong, I looooove to EAT baked goods, but the process is not something I excel at!

If you ask me, it’s too much science and math… I tend to cook “with a pinch here” and “just a dash there.” Can you tell me the last time you added a dash of baking soda to a cake and had it work out? Right. Probably never.

It’s not that I hate science and math, in fact, they were my favourite subjects in high school! Astronomy, biology, chemistry… algebra, geometry, number theory… I loved them all! But somewhere along the line I lost my passion for it all. These days you’d be hard pressed to find a math equation I can solve without the use of a calculator… or google.

But I digress. Let’s get back to the baking…. specifically, this galette. Since I’m not a “baker” I tend to rely on two things: 1) premade goods like pie crusts and dough, and 2) tried, tested and true recipes from people I trust! Knowing I had a few hours to invest in this galette, I reached for Charmaine Christie’s “No Fail Pastry” recipe. I’ve used this recipe a handful of times and it never disappoints! It takes both the math and science out of baking and delivers a pastry that is rich and buttery! But if time is an issue, a premade deep dish pie crust works just as well!

This easy, free-form, sweet & savoury “pie” is filled with ripe pears, sweet honey, crunchy walnuts and vibrant blue cheese. Yes, I said blue cheese.

From the family-owned That Dutchman’s Cheese Farm in Nova Scotia, this award-winning blue cheese, provided by my friends at the Dairy Farmers of Canada, is lovingly referred to as Dragon’s Breath. With its strong aroma and creamy texture, this eclectic Canadian cheese created by cheese maker Willem Van Den Hoek pairs well with red wine, pears, chocolate or simply spread across a piece of sourdough. From pasta to dessert, this unique cheese works well in a variety of recipes… including this galette!

Description

Looking for a beautiful yet easy recipe to impress weekend guests? This galette fits the bill! A buttery crust encases sweet pears that are complemented by slightly salty and creamy Dragon’s Breath Blue Cheese. Walnuts add crunch, while a drizzle of honey adds a touch of sweetness.


Ingredients

2 premade deep dish pie crusts, thawed OR The Messy Baker’s “No Fail Pastry
4 tbsp Dutchman’s Dragon’s Breath Blue, divided
3 ripe pears, sliced, divided
1/4 cup chopped walnuts, divided
2 tbsp honey, divided
1 egg, lightly beaten
2 tsp raw sugar, divided


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment and set aside.
  2. Roll out pastry to form two 8-10” circles. Spoon blue cheese into the center of each crust. Place sliced pears over blue cheese. Sprinkle with chopped walnuts and drizzle with honey. Work your way around the pie crust, folding the sides in over the pears. Brush top of crust with egg wash and sprinkle with raw sugar.
  3. Place galettes on a prepared baking sheet and bake for 30-35 minutes or until pastry is golden brown and flaky. Serve warm from the oven with a few pieces of dark chocolate and a glass of red wine.

  1. Galettes are the best, aren’t they? And a great way to make something delicious with a pie crust that is not too tricky for people with the ‘fear of crusts’, as I like to say. Bravo! It looks delicious 🙂
