Description

This is my all-time favourite toast recipe! Umami-rich mushrooms are sautéed in garlic, fresh herbs and a splash of balsamic vinegar and then piled high on top of a slice of hearty whole-grain bread smeared with goat cheese! Simple, yet completely divine!

Ingredients

Scale

1 tsp olive oil
34 medium-sized crimini mushrooms, sliced
1 tbsp high-quality balsamic vinegar
1/2 tsp minced garlic
1/2 tsp each fresh chopped thyme & rosemary
Sea salt & fresh cracked black pepper, to taste
1 piece of hearty whole grain bread, toasted
2 tbsp goat cheese

Instructions

1.  In a large non-stick pan over medium-high heat add olive oil and mushrooms. Sauté until mushrooms start to soften and brown, approximately 5 minutes. Reduce heat and add balsamic vinegar, garlic, thyme and rosemary; sauté another 1-2 minutes, stirring constantly, or until herbs are fragrant and balsamic has thickened (be careful not to burn the herbs & garlic!). Remove from heat and sprinkle with salt & pepper.

2. Spread goat cheese over toasted bread. Top with sautéed balsamic mushrooms. Serve warm.
