Tomato, Chorizo & Wine Steamed Mussels

I don’t know about you, but I indulged a bit over the holidays. Ok, ok… I indulged a lot.

Serve Tomato, Chorizo & Wine Steamed Mussels as an Appetizer

Turkey, stuffing, potatoes, cookies, pies, chocolate, cheese … and more cookies. It was a gluttonous two weeks, to say the least! As we quickly make our way into the second week of the new year, I am experimenting with healthier, nutrient-rich meals that pack a lot of flavour, like Asian Turkey Lettuce Wraps, Pomegranate, Persimmon & Goat Cheese Salad, and these Tomato, Chorizo & Wine Steamed Mussels. It’s not a resolution per se… but rather something that needs to be done in order for my pants to continue to fit! ????

Healthy Tomato, Chorizo & Wine Steamed Mussels

While this mussel dish might look fancy and indulgent I can assure you it’s not! In fact, a 75 g serving of fresh mussels contains 18 g of protein and is a good source of zinc, selenium, iron and vitamin C; not to mention other important nutrients including phosphorus, manganese, riboflavin, thiamine and vitamin B12. Nutrient-rich and full of flavour indeed!

Health and flavour isn’t even the best thing about this dish… it’s the ease of preparation! It’s so soooo easy to make! Mussels are often overlooked as a fast & flavourful dish because they look intimating, but in reality, there is nothing to be afraid of.. simply steam & enjoy!

Description

Thanks to the new Panasonic 3 in 1 Steam Oventhese steamed mussels are the easiest dish you could ever make! Fresh PEI mussels are steamed with bright red tomatoes, spicy chorizo, onions, garlic and white wine for the perfect dinner party appetizer or weeknight meal. And don’t forget warm crusty bread for sopping up all that delicious broth!


Ingredients

Units Scale

1 small red onion, finely chopped
2 cloves garlic, finely chopped
1 tbsp olive oil
1/2 cup dry white wine
32 oz fresh PEI mussels in shells (rinsed & broken shells removed)
1 cup diced tomatoes
4 oz sliced chorizo salami
1/4 cup fresh chopped parsley


Instructions

  1. In a large microwave-safe dish, add onion, garlic, and oil. Cover with pierced plastic wrap and cook at 1000W for 2 minutes using the microwave function of the Panasonic 3 in 1 Steam Oven.
  2. Add wine, rinsed mussels, tomatoes, and chorizo. Cook uncovered at 300W + Steam for 15 minutes using the microwave + steam function of the Panasonic 3 in 1 Steam Oven. Discard any unopened mussels.
  3. Transfer mussels to a large serving dish or bowl, sprinkle with fresh parsley and enjoy with a warm crusty baguette.

  1. I’ve always wanted to try mussels at home but they are so intimating. Thanks for showing me how easy they are to make! Didn’t know they could be made in the microwave.
